Grindstone Cowboy, the popular Tennessee-based coffee bar, restaurant and live-music venue, is officially open at 100 South Spring Street in historic downtown Shelbyville. The grand opening brings a revitalized 12,000-square-foot space featuring craft coffee, full-service restaurant, performance venue, speakeasy and future rooftop terrace.
Country star Craig Campbell and his wife, Mindy, founded Grindstone Cowboy and its first
award-winning location in Eagleville, Tennessee, in 2022. Since its opening, it has become known for its community-focused approach, craft beverages and live entertainment. For the second location, the Grindstone Cowboy founders partnered with Mike and Beth Davis of Shelbyville. The opening is expected to boost downtown Shelbyville’s vibrancy, providing a new gathering place for locals and visitors alike.
“This location represents a big step for us and for Shelbyville,” said Craig. “We’re excited to offer a space where people can connect over food, music and community in the heart of downtown.”
Dowdle Construction Group, an award-winning Nashville-based general contractor, led the renovation. “We’re honored to have partnered with Craig and Mindy Campbell on the newest Grindstone Cowboy location,” said Chase Manning, principal at Dowdle Construction. “Bringing their vision to life while preserving the historic charm of downtown Shelbyville was an exciting challenge.”
The new Shelbyville location is now open and operates from Monday to Thursday, 7 a.m. to 3 p.m. and on Fridays and Saturdays from 7 a.m. to 8 p.m.
